We would like to introduce Diana Webber to our "Customer Hall of Fame"! We have been so blessed by the overwhelming feedback from our customers on the taste of our grass-fed meat and how much the history of our farm means to them. We value every amount of feedback given. The thing is, we don't want to keep these wonderful comments to ourselves. We want to share them along with the faces they came from with everyone and thus, created the "Customer Hall of Fame".

Each month, we would like to feature one of our customers on the blog, on Facebook, or through our newsletter sharing about their BF Farms experience! This month, we have chosen Diana Webber. Here is what she has to say:

Why have you decided to choose Grass-Fed meat for you and your family?

Diana: I have always had a desire to know where my food comes from. "Grass-fed" is the beginning, but purely grass-fed, as BF Farms provides, is icing on the cake. I prefer my food not to be mass produce, and BF Farms promises to never mass produce their meat.
 

What is your favorite meal to make with BF Farms' Grass-Fed meat?

Diana: I have two favorites, it would be hard to pick one over the other. The Rib-eyes I get are phenomenal. It's like eating butter!! But the BF Farms ground beef and lamb make the best chili EVER!
 

What is your favorite thing about BF Farms?

Diana: BF Farms has a dedication to providing the best meat to their clients. Their commitment to quality and care is above and beyond. The Family also makes this generational farm what it is. Everyone I have met is full of caring, curiosity and a commitment to health and happiness. These things make every dime and every bite worth it.

Designer Foods

Designer Clothes have been around a long time – but what about Designer Foods?

Go to a New York Fashion Show and you’ll probably see some of the most outlandish looking clothes that you know you would never wear! Clothing designers, like Calvin Klein, create something new and different in order to be noticed and ‘ahead of the game’. It is simply the fashion world in which we live.

This same phenomenon is happening with foods. All across the country, chefs are competing to create what many might call outlandish combinations of foods to impress judges at competitive shows – and to sell to customers at high-dollar restaurants.

Chefs are to foods what Clothing Designers are to clothes!

Know that everything created is not new. For example; many chefs have rediscovered wood ashes and how they contribute flavor. Native Indians used wood ashes to add flavor to some of their foods, especially corn. They learned this from observing wild life and how they craved ashes from burned vegetation. What is very interesting is that Indians were never known to use wood ash on meat to enhance flavor. Because wild animals graze only on grasses, their meat naturally has tremendous flavor.

Why do clothing designers and chefs feel the need to add to what already exists? Could it be because the clothing or food is bland? Could it be because consumers are bored? Could it be because of the increasing demand to be new and “cutting edge”?

We have great news! We have received feedback from our customers that our grass-fed beef and lamb is not bland. They do not get bored with the flavor and do not need sauces or rubs. Lastly, grass-fed meat is “cutting edge"! There has been an increasing awareness for healthy, quality food that is ethically raised; food that is naturally flavorful and nutritious – just the way nature intended!

Slow Cooker Grass-Fed Meals

Slow Cooker Grass-Fed Meals for every lifestyle!

I am a firm believer in slow cooker grass-fed meals for EVERY lifestyle.

I am a mother of 2 beautiful, wild, hyper little girls. Their activities and potty schedules take up the majority of my day. When I worked full time, I envisioned my life as a stay at home mom to be full of creative projects, cooking together, and lots of naps. I chuckled to myself as I just wrote that sentence. I also had grand plans to cook or bake everything I had pinned on Pinterest...LOL!!! Lucky for me, there are ways to NOT have to spend your entire day in the kitchen with munchkins who do not want to help with a 4 hour meal prep.

I have decided that the crockpot is my best friend and I've noticed that it is very useful for pretty much every lifestyle, especially the busy one. Did you know you can cook steak in a crockpot?!? I did it for the first time a couple weeks ago as an experiment and yes, it was amazing. From steak to meatballs, from roast to chops, the slow cooker works for everything and it is so easy!

There is a noticeable difference between grass-fed and grain-fed meat though, even when slow cooking.

When I have cooked grain-fed meat in the past, it was always very bland tasting unless I added some kind of sauce. With grass-fed meat, you can forget the sauces, rubs, and seasonings you think you need to make an excellent meal! All you need is butter and maybe a little salt. The best kind of butter is also grass-fed. I recommend Kerrigold.

So go on and enjoy your jobs, families, and life without fretting over your meals! Throw that delicious grass-fed goodness in with butter in the morning and forget it until dinner!

 

Ingredients:

BF Farms grass-fed beef or lamb

Grass-fed butter

Salt

Preparation:

Open package of grass-fed meat and place in slow cooker.

Place grass-fed butter on top of your meat (as desired).

Add salt (as desired).

Cooking:

Set your slow cooker to it's low setting to cook your meat for 8 hours, or use it's high setting to cook your meat for 4 hours.

(Refer to your particular model's user's manual for more details on cooking times.)

Diana's Verde Chili

Diana's Verde Chili

With fall approaching and cool weather in sight, go ahead and put Diana's Verde Chili on your meal plan for the week; you will probably want to use it again and again throughout the season! This fabulous dish features our farm's lamb sausage. We realize that lamb can sometimes be tricky to cook well. That's why we are here to help! Well actually, that is why the amazing Diana is here and we are lucky to call her friend! Check it out!

Ingredients:

  • 12 tomatillos
  • 2 jalapenos
  • Small red onion
  • 2 cloves of garlic minced
  • 1 lb. BF Farms lamb sausage – mild
  • 1/2 cup cooked brown rice

Preparation:

My first mistake was not cooking the brown rice first…so I gladly suggest that you cook the brown rice first. I always learn by trial.

Heat your oven to 450 degrees under a broil setting.  Cut your tomatillos in half. Then take the seeds and membrane out of the jalapenos (or leave them in if you like the extra heat) and cut in half. Peel the onion then slice it in half also.  Put all the veggies on a baking sheet with a lip (jelly roll pan).  Drizzle olive oil on the veggies, and toss with hands coating the veggies well.  Sprinkle with a 2 tsps. of cumin, salt and pepper to taste.  Put into oven and roast/broil for 5-10 minutes.  Keep a constant eye on the veggies, since they can burn quickly.  I like a little char on mine, so the tops looked burnt on mine.  Pull the sheet out and set aside to cool.

In the meantime… start browning the lamb sausage, with the minced garlic and salt/pepper.  While this is going on, toss your roasted veggies into a blender or food processor.  The cooler they are the better this is.  Process until it resembles salsa.  Add this “salsa” to the browned meat along with the cooked rice.  Add enough water to just barely cover the ingredients, put a lid on it and let it simmer over medium heat for about 15 minutes or so.  Serve hot with either shredded cheese or sour cream.  I tried it both ways and loved it.

*A side note – Traditionally, Verde Chili is made with cubed pork, or shredded chicken and doesn’t include rice.  I had the beautiful lamb sausage from BF Farms, and used it instead.  I think it’s just as good, maybe better.*

The Babies are Here!

The Babies are Here!

The lamb babies are here, and more are arriving as I type this blog! Lambing season is one of the most exciting times at BF Farms.

For months we anticipate, watching the bellies of our pregnant ewes grow in the hot summer sun, knowing that many are carrying twins. We check on them more frequently than usual, making sure they are receiving adequate water and mineral, checking their bodies as they grow. They stay close to the water trough to get some relief from the heat and their backs sway with the weight of their bundle. Lying down is their favorite past time, as should be towards the end of a pregnancy. Am I right, mamas?

Then as sure as the seasons change, new life is born! When we hear the first baby cry, we know many more are coming and ready ourselves to care for a new generation of sheep. When we first began our sheep adventures on the farm, we tried to step in and help in the birthing process. We thought, "Of course we would step in and see how things were going because we are the farmers!  We typically receive extra care as humans so why wouldn't they?" We ended up doing more damage than good, entering in to a first time mommy and baby bonding situation that really needed to happen naturally. We have learned our lesson and now watch the miracles happen from the sidelines, allowing nature to take over. These mamas give birth in less than 10 minutes...to babies half their size...can you imagine?  Our ewes are strong. They certainly don't need our help.

We believe that the best nutrition for our lambs is to nurse with their mamas for as long as possible. They form a bond, nurse until they are strong enough to eat, and then begin to graze on our grasses when they are ready. Sounds familiar, doesn't it? We as humans strive for the same beginnings with our babies. Milk from mother is the best way to build up resistance against disease and illness. There's a reason why they call it "liquid gold"!
